I recently joined a “nyttevekstsafari”, (yes our Norwegian words get crazy we stick them all together) or “safari of useful plants”, and it was completely mind-opening! To see all the different kinds of edible plants and just the sheer amount of food going to waste in the wild!
Anyway we all got a plastic container with a layer of paper and some water. The guide said that plants will stay fresh until you get home and can also stay like this in the fridge for several weeks.
‘Geitrams’ has become my favorite plant. It’s seen as the Norwegian asparagus and it is quite meaty and also just grows everywhere. I could easily pick a few kg on an afternoon walk, and it’s perfect for cooking, making tea or even eating raw!
One day we made food for 5 people by frying them in butter, and now I made pesto!
I highly recommend to do some research of which edible wild plants grow in your area. Especially the weeds as you’re basically doing a favor by picking them. See if there is some expert doing guided tours, or get your hands on a local book.
I will never buy any asparagus imported from Germany when we have this equivalent growing in heaps. This is the biggest source of food waste - all the wild plants we don’t eat.

I have such a hard time keeping to my schedule. Now I’ve put a repeating Sunday calendar to remind me of writing ID so let’s see if I can be on time next week!
